Saltbush & Rubies Boutique
A hidden gem on the saltbush plains
Saltbush & Rubies is inspired by the resilient saltbush plains of Coleambally. We offer eco-friendly homewares, clothing, and natural health products that reflect true Australian values, embracing local, natural fibres and sustainable practices wherever possible. From farm to fabric, every piece tells a story of connection to the land, craftsmanship, and community.
Saltbush & Rubies is more than a boutique—it’s a story.
The name reflects the strength of the saltbush plains and the hidden beauty of nature’s treasures—like rubies beneath the dust. Our boutique celebrates Australian-made products, designed for sustainability, wellness, and thoughtful living.
We’re proud to connect you with goods that are rooted in the land, made with care, and curated to bring purpose and beauty to everyday life.
Our History
Founder Julie Bellato grew up on a property near Balranald, surrounded by red dust, saltbush, and a love for the bush. After moving to Coleambally for senior school, she married local farmer David Bellato and raised five children on their farm. Julie trained as a nurse and midwife, later working across remote Australia before returning to run her family’s farm tree nursery.
With innovation and passion, she built a revegetation business using a planting machine invented by her Dad, capable of planting 1,000 trees per hour. Her business grew to produce over one million seedlings annually and earned her the title NSW Young Australian of the Year 1996 for Sustainable Regional Development.
Over the years, Julie ran eco-based businesses, including bamboo nappies and a children’s bedwetting clinic, and founded the Food & Farm Festival in 2016 which drew over 4,500 visitors to Coleambally. She went on to lead Landcare in the Riverina, securing over $2 million in funding to revive local environmental projects.
Together with her husband David, whose Italian heritage and family values shaped a strong farming legacy, the Bellatos now operate Greenline Farming, growing soybeans, corn, wheat, and cotton. Greenline is the only licensed grower of Bojack Soybeans in Australia and won Southern Valley Cotton Grower of the Year 2024, plus finalist positions in the National Cotton Grower of the Year and Coles Weekly Times Farmer of the Year 2025.
Saltbush & Rubies was born from their shared love of sustainable agriculture, farm-to-fabric values, and the power of local stories.
